Change menu position, Blog page taglines and Portfolio layout on homepage

2. How can I edit the description on the “home” of the blog:

I want to change or remove the default text:

3. In the homepage the portafolio isn’t changing the structure. I want to use the 4:3 rectangles, but I choose it on the theme options > Portfolio options > Portfolio layout.
