Some examples I’d like to accomplish:

– Adding a full screen image and logo above the post feed?
– Being able to specify which post/s (not necessarily the latest) to pin to the top?
– How to customize how posts are shown? (adding word counts, excerpts, etc).

Let me know if I need to create multiple questions for this. Forgive me if I overlooked the answers elsewhere in the forum.

All these are customizations and not part of the regular theme help/supprto. You should go the standard WordPress way. A child theme (there is a starter one provided by us) and overriding templates or theme functions and customising them as needed. The “home.php” in the root of the theme serves for displaying the “overview page” and the “single-post.php” along with “content-post-*.php” files serve to display the content of the post in detail page and overview page as well.
