could you please let us know what exactly you mean? If you disable responsive functionality it means that page is going to be displayed as on desktop all the time. So very probably what you write is contradictory.

Unfortunately this needs more custom work. You need to manually update the code in this file:
wp-content/themes/minicorp/assets/wp/themes/default_colors.php

You can change all the media queries so they only apply for mobile devices not desktops. This might need a little more work and testing.

Optionally you could keep the responsive design off and could use a child theme to add a new css style for the mobile devices only, where you could set all the necessary changes for the mobile devices only.

In any way this is customization and is not part of the standard help/support for the theme. Hope this guide helps you head into the right direction.
