Since I don’t see a way to do that within the portfolio items, is there a way to add specific portfolio items for display on pages? Maybe some simple shortcodes?

If I understand it correctly you would like not to link to the detail of the portfolio but to any page (either internal or external). If that’s correct then you might use the WordPress SEO plugin and its redirection functionality:
