How do I set up a portfolio item to have the same template as this in your demo? (with the background image and all).

The easiest way is to import the demo data as per the documentation’s first steps section. You can then see all pages as they are on our live demo.

But manually would be:
1. Create new portfolio item
2. Add new row and set it as Section in its settings.
3. Once it is a section, set the “diamonds” background decoration
4. Add all the content in the row using the available page builder elements
