How can I design a default template for each blog post or portfolio item?

By default, new blog posts or new portfolio items have a header banner with its title and a default background image. Is there a way to define a template, with a proper image as header for posts, and another for portfolio items?

Also, currently the title of the post appears in the middle of the header. Is there a way to put it as a headline after the header?
