Exclude category from the blog page

Hi,

We really like this blog format: https://themes.ishyoboy.com/
Unfortunately I do not see how to choose the category I want to display in a particular page with that format? and it seems that only the blog page can have this format ?

My client really likes the theme and that format…but we have featured categories (not just one), and also the news category that is not in the blog but in another page.
